What is tin vessel?
The waft of Rasam made in a tin vessel is always special. Tin is Velleeyam and is safe to be used for cooking. It is a soft malleable metal and therefore the cooking procedure for common recipes will differ when this cookware is being used.
What is Eeyam?
The eeyam chombu /sombu is made of an alloy of tin and other metals. It does not contain any lead. In fact the actual vernacular name for lead is “Karu eeyam” and this tin coating is called “Velli eeyam”. Over time the word eeyam came to be confused with people not knowing if it was lead or any other metal.
What is EEYA Sombu?
Eeyam refers to a tin alloy in Tamil while the sombu is a type of smaller utensil. The alloy used in units in and around Kumbakonam is usually imported from Malaysia and these sombus are all handcrafted. My grandaunt remembers a time when the eeya sombu got mixed up for lead and saw it go out of favour in many homes.
How can you tell if you have a pure tin vessel?
Simmer, simmer, simmer–don’t boil!! Tin has a low melting point, so your vessel should always be 3/4 full, and your flame on medium-low unless you want a meltdown (literally).
How do you make Rasam in EEYA Sombu?
Ingredients to make Thakkali Rasam – (serves 4)
- Tomato – 1 large (chopped)
- Tamarind – marble size piece.
- Green chili – 1 (chopped)
- Tuvaram paruppu / toor dal – ¼ cup (cooked)
- Rasam powder/sambhar powder – 1 ½ tsp.
- Asafetida – ¼ tsp.
- Sugar – ½ tsp.
- Cilantro – to garnish.
What is EEYA Chombu?
Eeya chombu (Tin vessel) is traditionally used for making rasam. It’s properties gives unique taste and aroma to the Rasam. It can also be used to set thick curd. Some other extended uses of eeya chombu includes making kheer (Payasam) or boiling milk.
Is tin vessel good for health?
This ancient metal is rarely used these days; however, it offers immense benefits. Specifically, it pacifies vata (dry skin, nervous temperament, irritability) and pitta. It also helps reduce obesity, improve eyesight and skin condition.
Is brass cookware good for health?
In fact, it was a common belief that cooking and eating in brass plates was beneficial for health. However, eating in brass utensil was not that harmful as compared to cooking. Brass easily reacts with salt and acidic foods, when it is heated. Hence, cooking in such utensils must be avoided.
Why aluminium utensils should not be kept in water overnight?
Aluminium utensils should not be kept in water overnight : Aluminium does not react with pure water but when salts are present in water they remove the oxide layer on the surface making aluminium reactive. Then aluminium reacts with water slowly . So aluminium vessels should not be kept in water overnight.
